Course: Side Dish

Ingredients

  • 1 bunch swiss chard approximately 6 to 8 stems
  • 1 tablespoon cooking oil (I like to use avocado oil)
  • 3 garlic cloves
  • 1 medium onion
  • 1/4 teaspoon sea salt ,plus more to taste
  • freshly ground black pepper
  • lemon wedge for squeezing optional

Method

  1. Begin by thoroughly washing the Swiss chard to remove any dirt. Separate the stems from the leaves and chop both into bite-sized pieces.
  2. Heat oil in a large skillet over medium heat.
  3. Add diced onion to the skillet and sauté for about 1 minute until fragrant.
  4. Add minced garlic cloves and continue to sauté for an additional minute, being careful not to burn the garlic.
  5. Add the chopped Swiss chard stems first and cook for 2-3 minutes, as they take longer to soften.
  6. Next, add the chopped leaves to the skillet. Stir well to combine.
  7. Season with salt and pepper to taste.
  8. Cook, stirring occasionally, for about 5-7 minutes until the leaves are wilted and tender but still vibrant green.
  9. Optionally, finish with a squeeze of fresh lemon juice for added flavor.

Notes

Optionally, you can also finish with a sprinkle of red pepper flakes if you’d like some heat. Serve warm as a nutritious side dish. Enjoy!
